I always make mini bread loaves for my neighbors at Christmas. It is a family favorite.
Cranberry Nut Bread
2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/4 cup butter, softened
1 egg
3/4 c. orange juice
1T grated orange zest
1 1/2 c. fresh or frozen cranberries
1/2 c. chopped walnuts
In a bowl, combine flour, sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Beat egg, orange juice and peel; stir into dry ingredients just until blended (batter is thick). Add the cranberries and walnuts. Spoon into a greased and floured loaf pan. Bake at 350* for 65-70 minutes or until a wooden pick inserted near the center comes out clean. Cool in pan 10 minutes before removing to wire rack to cool completely.
**This makes 4 small loaves. Bake at 350* for 30-35 min.
YIELD: 1 loaf or 4 small loaves

This is the EXACT recipe my dh uses at holidays! We have a loaf in the freezer still, and I really, really need to be pulling that out! (How about if I bring it to eat after the spinach casserole?)
That sounds good! I love that recipe. I've not even thought about changing it to WW. I probably should experiment before Christmas, eh?
